  • 1 1/4 cup granulated sugar
  • A few drops purple food coloring
  • 2 tbsp cornstarch
  • 2 tsp lemon juice
  • 2 cups blackberries
  • 1/4 cup sugar (or any sweetener)
  • 2 tbsp lemon juice
  • 1 tbsp cornstarch
  • 2 tbsp water
  • 1 1/2 cups cold heavy cream
  • 1/4 cup powdered sugar
  • 1 tsp vanilla

Instructions

  1. Preheat your oven to 250°F (120°C) and line a baking sheet with parchment paper.
  2. Whisk egg whites in a stand mixer until soft peaks form. Gradually add granulated sugar while whisking until stiff peaks form. Fold in cornstarch and lemon juice gently.
  3. Spoon or pipe meringue onto the prepared baking sheet in desired shapes. Bake for about 60 minutes until crisp outside but soft inside. Turn off the oven and let the meringues cool inside.
  4. For the blackberry filling, combine blackberries, sugar (or sweetener), lemon juice, and water in a saucepan over medium heat for 5-7 minutes until softened. Mix cornstarch with water, add to the pan, and stir well to thicken; let cool.
  5. Whip heavy cream with powdered sugar until soft peaks form.
  6. Once meringues are cooled, fill each shell with blackberry jam and top generously with whipped cream and additional blackberries before serving.
