  • ¼ cup melted Biscoff cookie butter (for filling)
  • 56 crushed Biscoff cookies (for filling)
  • 1 tsp vanilla extract (optional, for icing)
  • 2 tbsp vegan cream cheese (softened, for icing)
  • 1 cup powdered sugar (for icing)
  • 2 tbsp melted Biscoff cookie butter (for icing)
  • 12 tsp dairy-free milk (for icing)

Instructions

  1. In a mixing bowl, combine the warm dairy-free milk with ¼ cup of light brown sugar. Stir until dissolved.
  2. Sprinkle in the active dry yeast and let it sit for about 5 minutes until frothy.
  3. Add 3 cups of all-purpose flour, ground cinnamon, salt, melted vegan butter, and vanilla extract into the yeast mixture. Mix until combined.
  4. Knead the dough on a lightly floured surface for about 5 minutes until smooth.
  5. Place the kneaded dough in a greased bowl and cover it with a damp cloth. Allow it to rise in a warm place for about 1 hour or until doubled in size.
  6. In a small bowl, mix together ½ cup light brown sugar and 1 tablespoon ground cinnamon.
  7. Spread softened vegan butter over the rolled-out dough followed by an even layer of melted Biscoff cookie butter.
  8. Sprinkle the cinnamon-sugar mixture over the top along with crushed Biscoff cookies.
  9. Carefully roll up the dough starting from one edge into a log shape.
  10. Cut into 8 equal pieces using a sharp knife or dental floss.
  11. Preheat your oven to 350°F (175°C).
  12. Place rolls in a greased baking dish and let them rise again for about 30 minutes.
  13. Bake for approximately 20 minutes until golden brown.
  14. While baking, combine softened vegan cream cheese with powdered sugar and melted Biscoff cookie butter in a bowl.
