  • 1 teaspoon baking soda
  • 1 and 1/2 teaspoons baking powder
  • 3/4 teaspoon kosher salt
  • 1/4 teaspoon cinnamon (optional)
  • 1/8 teaspoon nutmeg (optional)
  • 1/8 teaspoon cloves (optional)
  • 1/2 to 3/4 cup toasted pecans or walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×5 inch loaf pan with nonstick spray or parchment paper.
  2. If using nuts, toast them on a baking sheet for about 5–7 minutes until fragrant.
  3. In a mixing bowl or stand mixer, cream together softened butter, brown sugar, and granulated sugar until fluffy.
  4. Add eggs and vanilla extract; mix until well combined.
  5. Mash ripe bananas and stir into the mixture.
  6. In another bowl, combine flour, blended oats, baking soda, baking powder, and salt.
  7. Gradually add dry ingredients to the wet mixture; mix until just combined.
  8. Fold in sour cream and toasted nuts if desired.
  9. Pour batter into the prepared loaf pan and bake for 55–65 minutes or until a toothpick comes out clean.
