  • 2 medium sweet potatoes, peeled and chopped into 1/2” chunks
  • 1 large yellow onion, chopped into 1” pieces
  • 1 Tablespoon olive oil
  • 1 medium head of broccoli, chopped into florets
  • 1 pound boneless skinless chicken breasts
  • 1/2 cup BBQ sauce (divided)
  • Seasonings: salt, garlic powder, chipotle powder or chili powder

Instructions

  1. Preheat oven to 400°F (200°C).
  2. On a lined sheet pan, toss sweet potatoes and onions with olive oil, salt, garlic powder, and chipotle powder. Bake for 20 minutes.
  3. Add broccoli to the pan and place chicken breasts on top. Brush chicken with BBQ sauce and return to oven for an additional 15–20 minutes or until cooked through.
  4. Shred the chicken with forks and mix with remaining BBQ sauce.
  5. Assemble bowls by dividing the chicken, roasted veggies among serving dishes.
