  • 1 ½ pounds boneless skinless chicken tenderloins
  • 1 cup buttermilk
  • ¾ cup all-purpose flour
  • ½ cup cornstarch
  • 1 large egg
  • 2 cups panko breadcrumbs
  • 1 cup mayonnaise
  • ½ cup Thai sweet chili sauce
  • 1 teaspoon Sriracha
  • 2 tablespoons honey

Instructions

  1. Prepare the bang bang sauce by whisking together mayonnaise, Thai sweet chili sauce, Sriracha, and honey in a bowl. Set aside.
  2. Marinate chicken tenderloins in buttermilk for at least 15 minutes.
  3. Create a breading station with flour mixed with cornstarch and seasonings in one bowl, beaten egg with Sriracha in another, and panko breadcrumbs in a third.
  4. Dredge marinated chicken in flour mixture, dip into egg mixture, then coat with panko.
  5. Fry breaded chicken in hot oil until golden brown (about 6 minutes).
  6. Drain on paper towels and drizzle with bang bang sauce before serving.
