  • ½ cup mashed banana (one medium-large banana)
  • ¼ cup unsalted butter (for frosting)
  • 6 tablespoons light brown sugar (for frosting)
  • 2 tablespoons milk (for frosting)
  • Dash of salt (for frosting)
  • 1 teaspoon vanilla (for frosting)
  • 1 cup powdered sugar (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8 inch baking pan with aluminum foil.
  2. In a medium bowl, mix melted butter, light brown sugar, and salt until combined. Add the egg, vanilla, and cinnamon; mix well. Fold in the mashed banana.
  3. Gradually add flour and stir until smooth. Pour into the prepared pan and smooth the top.
  4. Bake for 25-30 minutes until the center is set. Let cool in the pan.
  5. For the frosting: Melt additional butter in a saucepan until amber; stir in brown sugar, milk, and salt until boiling. Cool slightly before whisking in vanilla and powdered sugar.
