  • 1/2 cup balsamic vinegar
  • 1/4 cup olive oil
  • 2 tablespoons honey
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste

Instructions

  1. In a medium mixing bowl, whisk together balsamic vinegar, olive oil, honey, garlic, oregano, thyme, salt, and pepper until well combined.
  2. Place chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over them. Seal or cover and refrigerate for at least 30 minutes (preferably 2-4 hours).
  3. Preheat oven to 400°F (200°C).
  4. Remove chicken from the refrigerator and let sit at room temperature for 10-15 minutes.
  5. Line a baking dish with parchment paper or foil and lightly grease it with olive oil.
  6. Arrange marinated chicken in the dish and pour any remaining marinade over the top. Bake for 25-30 minutes until the internal temperature reaches 165°F (75°C).
  7. Let the chicken rest for 5-10 minutes before slicing and serving.
