  • 2 lbs boneless chicken thighs or breasts
  • 1 cup plain Greek yogurt
  • 2 tbsp olive oil
  • 3 tbsp lemon juice + zest
  • 2 cloves garlic
  • 2 tbsp zaatar seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, whisk together Greek yogurt, olive oil, lemon juice and zest, garlic, za’atar, salt, and pepper until well combined.
  3. Place the chicken in a gallon-sized plastic bag or container and pour the marinade over it. Seal tightly and refrigerate for at least 30 minutes or up to overnight.
  4. Coat a baking dish with cooking spray or olive oil before placing the marinated chicken in a single layer.
  5. Bake uncovered for about 45 minutes, or until golden brown and cooked through (internal temperature reaches 165°F).
  6. Garnish with chopped parsley before serving.
