  • 1/2 cup butter (softened)
  • 2/3 cup granulated sugar
  • 2 eggs (room temperature)
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 3/4 teaspoons baking powder
  • 1/2 cup milk or almond milk (room temp)
  • 2 large apples (like Granny Smith, peeled and chopped small but not fine)
  • 2 tablespoons granulated sugar (for topping)
  • 1 teaspoon cinnamon (for topping)
  • 1/2 cup powdered sugar (for optional glaze)
  • 13 tablespoons of milk or cream (for glaze)

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Prepare your 9×5-inch loaf pan by spraying it with non-stick cooking spray.
  2. In a small bowl, combine the light brown sugar and ground cinnamon for the swirl. Mix well and set aside.
  3. In a mixing bowl, beat together the softened butter and granulated sugar until light and fluffy for about 2-3 minutes.
  4. Add the eggs one at a time to the butter mixture, mixing well after each addition. Then stir in the vanilla extract.
  5. In another bowl, whisk together the all-purpose flour, baking powder, and remaining ground cinnamon. Gradually add this dry mixture to the wet ingredients while alternating with milk or almond milk. Mix until just combined.
  6. Gently fold in the chopped apples using a rubber spatula until evenly distributed.
  7. Pour half of the batter into the prepared loaf pan. Sprinkle half of the cinnamon sugar mixture over this layer. Add the remaining batter on top followed by another sprinkle of cinnamon sugar mixture.

  9. Allow your bread to cool for about 10 minutes in the pan before transferring it to wire racks. For an optional glaze, mix powdered sugar with milk or cream until smooth; drizzle over cooled bread before slicing.
