  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 2/3 cups all-purpose flour
  • 2 teaspoons apple pie spice
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1 cup milk
  • 3 tablespoons boiled cider
  • 10 tablespoons unsalted butter, melted
  • 1/4 cup boiled cider
  • 1 1/4 cups granulated sugar
  • 4 1/4 teaspoons apple pie spice

Instructions

  1. Preheat your oven to 425°F and grease a mini muffin pan.
  2. In a large bowl, mix granulated sugar, brown sugar, butter, vegetable oil, and salt until smooth. Add eggs one at a time and stir in vanilla.
  3. In another bowl, whisk together flour, apple pie spice, baking powder, and baking soda.
  4. In a measuring cup, combine milk and boiled cider.
  5. Gradually add dry ingredients to the wet mixture in thirds, alternating with the milk mixture until just combined.
  6. Fill each muffin well halfway with batter and bake for 7 to 9 minutes until golden brown.
  7. For topping, combine melted butter with boiled cider and whisk together sugar with apple pie spice.
  8. Coat warm doughnut holes in butter mixture followed by spiced sugar.
