  • ½ cup butter (room temperature)
  • 1 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 tablespoon apple pie spice
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¼ cup melted butter (for topping)
  • ½ cup sugar (for topping)
  • 1 tablespoon cinnamon (for topping)

Instructions

  1. In a saucepan over medium heat, bring the apple cider to a boil and reduce it by half (20-30 minutes). Allow it to cool.
  2. Preheat your oven to 350°F (175°C) and grease a 9×5 loaf pan.
  3. In a mixing bowl, cream together room temperature butter and brown sugar until fluffy. Beat in the egg and vanilla.
  4. Combine dry ingredients (flour, apple pie spice, baking powder, baking soda, salt) in another bowl. Gradually add to the wet mixture along with reduced cider. Mix until just combined.
  5. Pour batter into the loaf pan and bake for about 50 minutes or until a toothpick comes out clean.
  6. Let cool for 15 minutes before transferring to a cooling rack. Brush with melted butter and sprinkle cinnamon-sugar topping.
