  • ½ teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 2 cups all-purpose flour
  • ¼ cup sanding sugar (for rolling the cookies)

Instructions

  1. In a large bowl, beat together the shortening, sugar, and egg with an electric mixer until creamy. Add boiled apple cider and mix well.
  2. In another bowl, whisk together flour, baking soda, salt, cinnamon, ginger, cloves, and allspice. Gradually combine dry ingredients with wet mixture until just mixed.
  3. Cover dough with plastic wrap and refrigerate for one hour.
  4. Preheat oven to 375°F (190°C). Shape chilled dough into tablespoon-sized balls and roll in sanding sugar before placing on a parchment-lined baking sheet.
  5. Bake for 9-11 minutes until edges are lightly crisped. Cool on a wire rack.
