  • 20 tablespoons unsalted butter
  • 2½ cups all-purpose flour
  • 2 teaspoons apple pie spice or pumpkin spice
  • 1 teaspoon cornstarch
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • 1¼ cup light brown sugar
  • ¼ cup granulated sugar
  • 1 large egg, room temperature
  • 1 large egg yolk, room temperature
  • 1 teaspoon vanilla extract

Instructions

  1. In a saucepan, reduce apple cider over medium heat until it measures about ¼ cup. Cool.
  2. Brown the butter in another saucepan over low heat; cool after browning.
  3. In a bowl, whisk together flour, baking powder, baking soda, cornstarch, spice blend, and salt.
  4. In a large bowl, mix cooled butter with sugars until blended; add egg, yolk, reduced apple cider, and vanilla.
  5. Gradually combine dry ingredients with wet mixture until just mixed.
  6. Scoop dough onto a lined baking sheet and bake at 375°F for about 9-11 minutes.
  7. Cool on the rack before icing with powdered sugar glaze and rolling in cinnamon sugar.
