  • 1 lb ground chicken
  • 1 egg
  • 1/2 yellow onion, diced
  • 1/2 Granny Smith apple, peeled and diced
  • 2 oz cheddar cheese, grated
  • 2 large sweet potatoes
  • 2 Tb butter
  • 2 Tb maple syrup
  • 1 tsp soy sauce
  • 1/2 c fine breadcrumbs
  • 1/4 cup parsley, chopped
  • 1/4 cup walnuts, finely diced
  • 1 inch piece of ginger, grated
  • 1/2 tsp each: cinnamon, coriander, cumin, nutmeg
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F.
  2. Bake sweet potatoes for 60-75 minutes until tender.
  3. In a sauté pan, heat olive oil and sauté onions and apples until softened; deglaze with soy sauce and cool.
  4. In a mixing bowl, combine ground chicken, egg, breadcrumbs, cheese, parsley, walnuts, ginger, salt, pepper, and the cooled onion/apple mixture. Mix gently.
  5. Form into 14-16 meatballs and place on a greased baking sheet.
  6. Bake meatballs for about 15 minutes until cooked through (internal temperature should reach 165°F).
  7. Mash baked sweet potatoes with butter, maple syrup, and spices.
