  • ½ cup plus 2 tablespoons sugar (divided)
  • 3 tablespoons all-purpose flour
  • ¼ cup unsalted butter (softened)
  • 2½ cups heavy cream (chilled)
  • ⅓ cup sugar
  • 1 teaspoon vanilla extract
  • 1½ cups unsweetened coconut chips or sweetened shredded coconut
  • 1 4-to 6-ounce bar white chocolate, shaved

Instructions

  1. Preheat oven to 350°F (175°C). In a food processor, combine flour, sugar, salt, and shredded coconut. Add cold butter and pulse until crumbly. Gradually mix in ice water until dough forms.
  2. Shape into a disk, wrap in plastic wrap, and refrigerate for 30 minutes. Roll out the dough to fit a 9-inch pie pan and bake for 20 minutes until golden brown. Let cool.
  3. For the filling, simmer whole milk with shredded coconut and vanilla bean. Whisk eggs with sugar and flour; temper with hot milk before stirring back into the saucepan. Cook until thickened.
  4. Pour the filling into the cooled crust and chill for at least four hours.
